GRASbase™ - Flavor Ingredient Reference Database with ingredients through GRAS 20
is the first commercial
tool designed to help flavorists create flavors.
Sensory data is assigned to flavors where they are thought to be useful. Skeleton formulas are then generated from assigned sensory data. Sensory data is reviewed for the ingredients in the formula by clicking on the ingredient. Ppm values are entered into the formula based on sensory data, and the program calculates percent solutions for ingredients, and use levels for 10 or 100 gram formulas. All data can be edited and additional flavors can be added easily.
800 ingredients are included in the program with qualitative sensory data, plus 200 ingredients with qualitative sensory data and quantitative intensity ratings. See Focused Flavor Creation using Quantitative Sensory Data (Presented at the Society of Flavor Chemists meeting on December 5, 2002).
This approach to creating flavors has been proven by flavorists and flavorists trainees. Reports include retrieving ingredients from flavor descriptions, ingredients useful in selected flavors, sensory data for selected ingredients and formulas.
